Aubry is a small wine label built around a simple idea. Make wine that feels honest. Make wine worth drinking.

I’m Dylan. I have a master’s degree in viticulture and enology from Montpellier, France, but most of what I know comes from the time I’ve spent in the field. I’ve fallen asleep on night shift at massive wineries in Australia waiting for juice trucks to show up. I’ve crawled across vineyard rows in France with Chérie Germain studying wild strawberries under the vines. I’ve worked harvests, helped plant vineyards, and spent years advising other winemakers on everything from rootstock to water use.

I’ve watched wine get built in labs, dialed in to the tenth of a percent. I’ve also shared bottles with natural winemakers who haven’t added a thing since the grapes were picked. Somewhere in between, I found what I believe in.

Our chardonnay comes from a single organically farmed block in Oak Knoll. Fruit is picked early to keep things fresh. Fermented slow. I let the wine stay clean and textured without trying to impress anyone. It’s a wine made to open and enjoy, not just swirl and talk about. It drinks more like a sauvingon blanc than an oaky chardonnay.

The cabernet sauvignon is part of what we call The Quiet Collection. It comes from one acre in Coombsville that I farmed myself. No crew. No shortcuts. Just me, a one-eyed Vizsla, and the bluebirds I relied on to eat the mealybugs.

This was never meant to be scalable. It was about doing it all from start to finish. From pruning and spraying to picking and pressing. It’s the kind of wine that doesn’t need to be everywhere. Just needs to be real.
